This isn't a lateral move—it's a full evolution. Where Temaki Society operated as a nimble pop-up, Sonmari is a proper restaurant with a singular vision: Korean-Japanese fusion temaki that layer flavor upon flavor, plus an arsenal of Korean small plates that keep you coming back between rolls.
The gimmick here is legitimately fun, not gimmicky. Diners slide rice and fish directly from wooden planks onto nori sheets, DIY-style, which gives the whole meal a participatory energy that fast-casual dining usually botches. But Sonmari executes it with the rigor it deserves. The handrolls themselves are maximalist in the best sense—topped with caviar, gochujang-marinated eel, minced albacore studded with banh mi pickles. These aren't confused fusions; they're coherent flavor sentences that happen to speak two languages at once.
